Okay, we’ll admit it, it can be hard to eat out veggies consistently. There are just so many temptations out there, and salad is not always the most exciting option. Well, forget about all of that when it comes to this salad, because you’ll be reaching for more and more, we promise. Best of all, all it takes is chopping up some veggies, cracking open a can of beans and a can of corn, whipping up delicious avocado dressing, and you’ve got a fantastic meal ready to go.
Southwest Salad
1 head of chopped lettuce
1 cup chopped bell pepper
1/2 cup cilantro
1/2 cup chopped red onion
1/4 cup sliced scallions
3/4 cup chopped tomatoes
1 can black beans
1 can corn
1 avocado
1 clove of garlic (or more!)
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil
1 tablespoon cilantro
juice of 1 lime
Delicious & Nutritious
Place all dressing ingredients in a food processor or blender and blend until fully smooth. Mix well and make sure there are no lumps. Set aside.
Chop all of the vegetables and place in a large bowl. Open the black beans, rinse thoroughly and dry. Add to the salad bowl. Open the corn, rinse well and toss onto salad.
Top the prepared salad with the dressing, toss to coat evenly. Enjoy your delicious salad! Feel free to add in tortilla chips, chicken, cheese or anything else.
