Here's What You'll Need:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tbsp garam masala
- 1 tsp turmeric
- ½ tsp cumin
- ½ tsp coriander
- 400g canned diced tomatoes
- 1 litre vegetable stock
- 2 cups frozen peas
- 1 cup red lentils, rinsed
- Juice of ½ lemon
- Fresh coriander, chopped (for garnish)

- Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
